6 Can Soup!


My mom was staying with Phillip and I this last week because she was attending a work retreat for a few days in Grand Prairie.  Driving around here scares her, because well, she's human, so I was dropping her off and picking her up on my way to work.  It definitely made my drive much longer than usual, but it was so nice having some company!  I felt much more awake in the mornings and less annoyed in the afternoons.  She promised that she would bring some dinner supplies so we wouldn't have to cook much at night and she introduced me to this little gem that I am pretty obsessed with now: "6 Can Soup."

This soup is ridiculously easy and super healthy!  My mom is more of a health freak than I am, if that's possible, so it's no surprise she knew about this recipe.  It was yummy and filling after a long cold day at work!  Enjoy!

Ingredients
1 can of each:
Chicken broth
Chicken n' Rice soup
Ranch style beans, undrained
Corn, undrained
Rotel
Chicken breast, chunks

Directions
-ummmmm, pour all ingredients together in a pot, dumb dumb!

Serve with sour cream, cheese, green onions, tortilla chips, pretzels, crackers, or even avocado slices!  So easy!

P.S. - The same morning of this soup coming into my life, I got pulled over for my broken light that I told you about weeks ago.  I know, I deserved it for being lazy.  Don't worry, there is now really nasty red tape fixing the little issue for now!

P.P.S. - This was made for me and this dish.  I want it now!

  1. I had a question : the recipe calls for chicken breasts chunks. Is this canned product also? And if not, do you cook the chicken before you put it in?

    1. Canned chicken breast is just like canned tuna. It has always kind of scared me, but my mom always uses it! The amount is equal to about 1 COOKED boneless skinless chicken breast roughly chopped.

  2. You can buy canned chicken it is normally by the canned tuna

    1. There is actually a can of beans and the brand is "Ranch Style Beans." I was confused too . . . until I saw it on the bottom shelf of the store.

    2. I think Ranch Style Beans may be a southern thing.... we just say that in recipes and everyone knows what it means, because they are so commonly used haha! They have their own brand, but I've also noticed that Great Value (Walmart generic) has "Ranch Style Beans" as well. It is referring to the type of sauce the beans are in, which is why you do not drain these beans in the soup.

  5. Ranch Style Beans are pinto cooked in a chili like sauce. There is the Ranch Style Beans (not available everywhere) or you can buy the store brand Chili Beans.

    1. Rotel is a brand of diced tomatoes with green chiles already mixed in. Like I responded about the Ranch Style Beans above, I am starting to thing calling "Rotel" only its brand name is regional as well. You can buy "Diced tomatoes with chiles" in any generic brand - all the same!

  9. Just made this with rotisserie chicken and added sour cream & tortilla chips when serving. Delicious! Very much like chicken tortilla soup. I used condensed chicken & rice and let it simmer very low for a half hour. Thanks for sharing!

  10. Yours sounds delicious!! Here's one we make at Christmas each year that is similar:

    Easy Tamale Soup

    1 can Ranch beans
    ½ cup instant rice (optional)
    1 can whole kernal corn
    1 chopped onion (optional)
    1 can chopped tomatoes or 1 can medium Rotel, if you want it spicy!!
    1 can tamales, cut into bite-sized pieces
    1 can chicken broth

    Place all ingredients except tamales into saucepan, and heat to boiling, and then turn to low. Add tamales last, just long enough to heat, as they dissolve easily. I actually buy fresh tamales. They are so much better than canned!!

    1. no, the sauce the beans are soaked in is what is responsible for the great soup flavor :) I'll add "undrained" to that like I did by the corn... thanks for making me notice that!

  12. Can anyone estimate the calorie count on the 6 can soup?

    1. I have never done that myself, because I think it would make me look into that in everything I ate and I would go crazy :) I consider this a low-calorie meal, because each individual ingredient relatively is. Because each comes from a can, I think you could easily add each total and then divide by your serving size.

    1. I make this on the stove, because it takes very little time to warm. You could easily put it in the crockpot on low if you want to come home to a meal that is complete already!

  14. This sounds so good and so easy! However, I'm not a huge fan of chicken and rice soup. Any suggestions for a substitute?

    1. I would suggest any other condensed soups that are chicken based - cream of chicken could give the soup a creamy texture while still giving the right taste or regular chicken noodle would add some pasta and not alter the taste

  15. Made this for dinner tonight and it was delicious! Only thing I changed was I added 2 baked chicken breasts instead of canned chicken. Topped it with green onion, avocado, shredded cheddar cheese, and sour cream along with tortilla chips. It was yummy and hearty :) Thank you so much for this recipe!!!
